Throwback Recipe: Blackened Catfish

I made this recipe ages ago, but I never had the chance to post about it. I love fish, but the commissary has a terrible selection, so it’s rare that we find good fish. I’m actually thinking about switching to a new grocery store because of it! On this occasion, I found two decent pieces of catfish and tried out a recipe for a blackened spice rub.


The spice rub was very easy, and very flavorful. There was a nice bite from the cayenne pepper. The fish goes right under the broiler until blackened, but be sure to check on it so it doesn’t burn up completely. In the meantime, I made a saute of corn, spinach and tomatoes to pair with it. An easy, fresh dinner to throw in the mix between autumn’s hearty soups and stews.

    Yum. I love catfish. I usually make mine with a cornmeal or panko coating-tossing a little Old Bay into the mix.

    As native Southerners, we love catfish and I have been eating it for the better part of 50 years (my wife is just a youngster … 15 years younger then me).

    Most of our catfish, I catch myself from the wild . . . it tastes much better than “farm-raised.”

    Of course, we only eat the “blue” catfish. The “mud” or “yellow” catfish is not acceptable to either my wife or to me.

    In our opinions, there are ONLY two ways to properly cook the delicately-flavored catfish: frying in a corn meal batter, and blackening.

    Any other method of cooking is a waste of good catfish.

    I surprised my husband with this recipe last night, after I cought him ogling it on your website.

    I couldn’t find catfish at that late hour and needed to use some very soft fish due to his dental problems, so I ended up using tilapia.

    I cooked it exactly as you suggest (although I need to overcook his a bit to get it soft) and I thought it was SUPERB! My husband found it much too spicy, though. I am afraid he’s aging fast, LOL.

    I certainly will make this again. It will make a nice dish when we have guests.

    I made it again for my husband two days ago. Now that he’s housebound, I try to cheer him up with some of his childhood favorites like catfish and deep fried mac and cheese.

    Since he still can only eat really soft foods, I tried this recipe in my crockpot. It wasn’t quite as good as the original, but it was still pleasing to Chuck.
