I have had this idea in my head for so long. Carrot cake baked oatmeal… carrot cake baked oatmeal.. I just couldn’t shake it! I typically make this simple baked oatmeal and we just switch up our toppings, but it was high time I got to experimenting with the recipe.

Before we move on, can we just say “Hello, gorgeous!” to that pour shot up there? I actually had a spare minute to get out my tripod, only to realize it wasn’t really working properly.. but somehow I got a pour shot in the midst of it all. I’m a happy food blogger today!

Carrot Cake Baked Oatmeal with Cream Cheese Topping

Food blogging is a funny thing. There’s so much that goes into each post that you guys don’t see! I’d invite you to come hang out with me here for a day to see what goes on, but I never actually know what day I’ll be working on “blog stuff.”

Take this oatmeal for instance.

The idea popped into my head months ago. I wrote it down while I was brainstorming blog ideas back in January. I finally got around to making it earlier this week. I waited until mid-day to make it so that I’d be able to photograph it in the afternoon light.. so we didn’t actually eat it for breakfast that day. I waited until the little one took her nap and the big one started his quiet time to start shooting.

I pulled our coffee table over by the window with the best light, grabbed all the toppings and tiny dishes and utensils and set up my shot. I fumbled with the tripod for a while, gave up, got my shots. I hooked up the camera to download and ate one of the servings of oatmeal from the shot. Then I started to clean up.. and ate the other one, ha! (Because, you know, one for me and one for baby. Totally logical.) I looked through the pictures quickly, then I didn’t actually get around to editing them or writing this post until a few days later. Now here we are!

Sometimes the process isn’t drawn out like that, but there’s usually something around here that gets in the way of productivity. Usually my own laziness.. or lack of natural light. 😉

Anyways, loves, this oatmeal is top notch. I’m so happy to share it with you, even if it took months for me to do it.

It’s not complicated to replicate that classic carrot cake taste. The big players are (of course) carrots, cinnamon, nutmeg if you’re feeling funky, raisins, walnuts and coconut, if you’re into it. I will say right now that I am not into pineapple in my carrot cake.. I think adding pineapple makes it more like hummingbird cake (which is also delicious, but is not carrot cake).

But let’s not forget the most important part- the cream cheese. Oh, you have got to have the cream cheese. The cream cheese makes it perfect. (Unless you are dairy-free, but you can top it with this delicious cashew cream instead!) I didn’t want to slather it with frosting (I mean, I did.. but it IS supposed to be breakfast, people), so I spun up an easy cream cheese topping in the blender and it was the best idea EVER, no joke.

You guys, this cream cheese topping.. it just kills it. The picture below explains perfectly. On the left side, you’ll see an appropriate amount of the cream cheese drizzle and toppings. On the right, the obscene amount I drowned my portion with after I took a bite. Then I took another bite and thought, “WHAT THE WHAT?! This stuff is insane!”

Maybe I’m over-reacting about oatmeal? But really, I’m obsessed.  Don’t wait too long to try this one!

Carrot Cake Baked Oatmeal with Cream Cheese Topping

Ingredients
  • 2 eggs, room temperature
  • ¼ cup maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon cinnamon
  • ½ teaspoon fresh grated nutmeg
  • ¼ cup melted coconut oil or grass-fed butter
  • ½ cup applesauce (you can substitute carrot puree for extra carrot flavor)
  • 2 medium carrots, grated (you can add more if you like)
  • 1¼ cup milk, dairy or non-dairy
  • 3 cups oats, gluten-free if necessary
  • ½ cup chopped walnuts or pecans
  • ¼ cup raisins
  • ¼ cup shredded coconut
  • For the cream cheese topping: 4 ounces cream cheese at room temperature
  • ¼ cup milk, room temperature (you may need a little more if you want the sauce thinner)
  • 1 teaspoon pure vanilla extract
  • 1-2 tablespoons raw honey or maple syrup
  • extras for serving- walnuts, raisins, shredded coconut or coconut chips, maple syrup

Instructions
  1. Coat an 8×8 or 2 quart baking dish with butter or coconut oil.
  2. In a large bowl, whisk together eggs, maple syrup, baking powder, vanilla, cinnamon, nutmeg, melted butter/coconut oil, applesauce and milk. Fold the oats, carrots nuts, raisins and coconut and combine well. Transfer the oat mixture into the baking dish and spread evenly around.
  3. To bake right away: Preheat the oven to 375 degrees. Let oat mixture sit and soak for 20-30 minutes at room temperature while the oven is preheating. Bake at 375 degrees for 30 minutes or until oatmeal is set and edges are brown.
  4. To bake later in the day or the next morning: Cover your dish tightly with plastic wrap, pressing the plastic directly on top of the oat mixture. Refrigerate overnight. In the morning, preheat oven to 375 degrees. Unwrap oatmeal and place in oven. Bake for 30 minutes or until oatmeal is set and edges are brown.
  5. To make the cream cheese topping, combine the cream cheese, milk, honey and vanilla in a blender. Blend until smooth and creamy.
  6. Serve hot with: cream cheese topping, maple syrup, raisins, walnuts and coconut.

The scene in my kitchen at 6:30AM this morning:

Two half-dressed kids are clamoring at my feet for their milk cups to be filled. Three-year-old Elliott climbs up into the helper tower, discovers the pan of coffee cake and yells, “LUCY! CAKE FOR BREAKFAST!” She squeals and nods her head to tell us she’s on board. I cut them each a small piece, they chomp away quietly, and then stick out their little hands for more. And so the day begins.

I think one of the best mom tricks for getting your kids to eat a little healthier is to give their food cool names. This definitely isn’t “cake” in the normal, American sense of the word, but in our house right now, it’s a treat. Especially at 6:30 AM. I feel good about all the ingredients, so I’ve got no problem serving them this kind of cake for breakfast.

The cake’s main ingredients are coconut flour, eggs, coconut oil, squash puree, a little honey and some spices. I get my coconut flour and oil from Tropical Traditions. On top is a “crumb” topping of chopped nuts, coconut oil, cinnamon and some coconut sugar. This is a lovely cake for snacking- it’s moist, but sturdy- it’ll hold up well in lunch bags or stuffed quickly into your purse when you’re on the go. It’s great with some fruit and yogurt in the morning, or on your brunch table; the perfect match for your afternoon tea or as a late-night snack without the guilt.

I have missed cake since I’ve been on GAPS. I know there are GAPS-legal cake recipes out there.. but it’s not like I can be eating cake all the time just because it’s technically legal. So a little coffee cake like this is just what the doctor (nutritionist?) ordered for me this week. I just have to work on my self-control and try not to eat more than one (or two) pieces a day.

I guess I can always call in my little people to help out with that. Cake for breakfast!

Coffee Cake (grain-free, gluten-free, paleo, GAPS)

Ingredients
  • ½ cup coconut flour, sifted or lumps removed with a fork
  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 teaspoon cinnamon
  • ½ teaspoon fresh grated nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • 6 eggs at room temperature
  • ¼ cup coconut oil, melted and cooled or very soft
  • ½ cup honey
  • ½ cup squash puree (any squash will do; summer or winter. I used acorn squash that I had frozen. You could also use pumpkin, carrot, apple, pear, etc.)
  • 1 teaspoon pure vanilla extract
  • ½ cup nuts, chopped (I used walnuts and pecans)
  • 2 tablespoons coconut or date sugar (you can substitute honey to be 100% GAPS legal, but the topping will be a little stickier)
  • 1 tablespoon coconut oil
  • 1 teaspoon cinnamon

Instructions
  1. Preheat the oven to 350 degrees. Prepare an 8×8 baking dish with parchment paper.
  2. In a large bowl, combine coconut flour, baking soda, sea salt and spices. Make sure there are no large lumps of coconut flour.
  3. In a medium bowl, whisk eggs, coconut oil, honey, squash puree and vanilla extract until well combined.
  4. Pour the liquid slowly into the dry ingredients, whisking well. Continue to whisk until the mixture begins to thicken up. Pour the batter into the prepared pan.
  5. In a small bowl, mix the nuts, coconut sugar, coconut oil and cinnamon. This is your topping. Sprinkle evenly over the batter in the pan.
  6. Bake for 30-35 minutes until golden brown and a toothpick comes out clean. Cool before serving and keep in an airtight container.

I’m in limbo.

We are moving soon (just two months away..). It’s soon enough that I’m starting to get sad/nostalgic/motivated to start fresh/etc; but not soon enough that I can actually do anything about it. It’s too soon to start packing, too soon for goodbyes. I want to soak up the last bit of time here, but I’m having trouble with that. Nick is gone at training and I feel like I’m just doing busy work- filling up the time, not really enjoying the time. I’ve made a summer bucket list, but getting through it seems like more work than fun (even though I know I’ll regret it if we don’t do those things before we go).

I think I might be in a cooking rut, too. I was immersed in the GAPS Intro diet for two months and now that I’m on the other side of it, I need to get inspired all over again. I’ve quit meal planning and I’m just cooking on the fly for me and the kids. I need to break out of this whole thing and start fresh!

I did manage to mix up these faux Larabar-type bars a few days ago. It was hard not to eat them all in one sitting- snacks like this are tough for me to resist! It’s not good for me to be the only adult in the house with no accountability. One of these days you will find me laid out on the floor after a nut butter overdose, I’m telling you!

If you’re not into figs, you can substitute another dried fruit or more dates. But you should try them- they’re pretty good. And this is coming from a girl who was a fig hater for the first 20 years of life. Break free, people! Eat figs. Eat food you think you don’t like. It might surprise you. And you can always spit it out gracefully into your napkin, so there’s that.

Hazelnut Fig Bars

Ingredients
  • 1 cup hazelnuts (I pre-soak and dehydrate mine)
  • 1 cup dried figs, stems removed
  • 1 cup pitted dates
  • ½ cup coconut flakes or shredded coconut
  • 1-2 tablespoons coconut manna/coconut cream concentrate/coconut oil

Instructions
  1. Add hazelnuts, figs, dates and coconut to the bowl of a food processor. Process until all ingredients are finely chopped.
  2. Scrape down the bowl an add 1 tablespoon of coconut manna. Process until the mixture starts to stick together between your fingers. Add extra coconut manna if necessary.
  3. Press the mixture into an 8×8 pan (lined with parchment or plastic wrap). Let cool in the refrigerator until hardened, then cut into 12 bars. Keep stored in the refrigerator.

It’s been a rainy morning here in GA today. Even the clouds know it’s a Monday.

Though it’s pretty sad-looking outside, the rain has not deterred us from having a lovely morning so far. I am still on my happy-husband-high from a weekend away (at Chateau Elan, ooh la la!) and I will ride it as long as it lasts!

Our answer to this dreary weather is muffins. Pumpkin streusel muffins.

I do my fair share of baking, but I am not the main muffin baker of my family- that title goes to my mom. Nana loves a good muffin, particularly if it’s stuffed with nuts/fruit until it’s bursting out of the wrapper. She loves to make a giant batch of her Morning Muffins when we come home to visit and she has a stainless steel bowl for mixing her batters that is bigger than.. well, it’s just huge.

She is probably going to text me as soon as she sees this and ask me to freeze a few for her next visit.

I went with pumpkin simply because we had some pumpkin puree leftover from pumpkin pancakes a few days ago. I added the streusel because I (have no self-control and) cannot resist that sweet crunch. If I’m going to make muffins, I’m gonna do it up.

The muffins are grain-free, gluten-free, refined-sugar free and paleo. The main ingredients are pumpkin, eggs, coconut flour, and butter/coconut oil. The recipe is pretty easy to pull together and they’d still be yummy without the streusel if you want to save some time.

I had a question on Facebook about alternative flours and I’d like to say a little bit about them in case these new ingredients are freaking you out. I debated for a long time about investing in these new ingredients because 1) they’re expensive in small quantities and 2) I was so used to wheat flour and didn’t want to adapt. I started by transitioning to a gluten-free flour mix first (King Arthur has one you can find easily) and then started experimenting with grain-free flours.

Coconut flour, almond flour and other grain-free/nut flours do not act the same as traditional wheat flour- they do not contain gluten, so they need binders like eggs or flax seed to make successful batters. Recipes using these flours are dense- they don’t rise up the way that wheat flour does, but that doesn’t mean they aren’t tasty. They also have the added benefit of fiber and other nutrients that wheat flour does not. If you are new to baking with these flours, I suggest following your first few recipes closely before you start experimenting with substitutions.

I buy my almond flour from Honeyville and my coconut flour from Tropical Traditions. Both companies have sales and bulk purchasing that you can take advantage of to save some money.

  • For the streusel:
  • ¼ cup softened butter or coconut oil
  • ¼ cup almond flour
  • 2 tablespoons unrefined sugar of choice
  • ½ teaspoon sea salt
  • 1 cup nuts, chopped (I used half walnuts and half macadamia nuts. Pecans or almonds would be great, too. If you like chunkier streusel, you don’t have to pre-chop the nuts.)
  • ½ cup unsweetened coconut chips or shredded coconut
  • For the muffins:
  • ½ cup pumpkin puree
  • ½ cup melted coconut oil or butter
  • 6 eggs
  • ¼ cup maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon sea salt
  • ¼ teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon cloves
  • ⅛ teaspoon black pepper
  • ½ cup coconut flour

Instructions
  1. Preheat the oven to 350 degrees. Grease a muffin tin or line it with 12 muffin liners.
  2. To make the streusel topping, combine the butter/coconut oil, almond flour, unrefined sugar, sea salt, nuts and coconut in the bowl of a food processor. Pulse until the ingredients are loosely combined. Set aside.
  3. To make the batter, whisk pumpkin, coconut oil/butter, eggs, maple syrup and vanilla. Add spices, baking soda and coconut flour and whisk until it thickens up.
  4. Spoon the batter into 12 muffin cups. Top with the streusel. Bake for 30-40 minutes or until a toothpick comes out clean. Let cool on a wire rack for at least 10-20 minutes. (To make sure the streusel doesn’t get too brown, you can top the muffins with some foil about half way through baking.)

Let me take you back for a second- imagine it’s Halloween in the early 90s. I’m probably dressed as a black cat (it was my thing). I come home with a pillowcase full of candy and start my sorting ritual with my mom. I would hoard the peanut butter cups and Hershey bars, and I would hand over the Mounds and Almond Joys directly to my mom. Who would want to eat something horrible like coconut?? Not early 90s me, that’s for sure. Wouldn’t get near the stuff.

But now.. coconut and I are BFFs. I couldn’t make it through the day without some coconut oil, coconut butter, coconut chips, you name it. And add some chocolate? I am puddy in your hands.

Dark Chocolate Coconut Bites

Ingredients
  • 1¼ cup shredded (desiccated) coconut
  • ¼ cup melted coconut oil
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 4 ounces dark chocolate
  • 2 tablespoons coconut oil
  • thick cut coconut, almonds or pecans for garnish

Instructions
  1. In a medium bowl, mix coconut, coconut oil, honey or maple syrup and vanilla extract. Press into mini muffin tins (should make 12-16 bites). Let cool in the freezer for 30 minutes.
  2. While the coconut cools, melt the dark chocolate and coconut oil. Spoon the chocolate into the molds over top of the coconut mixture. Top with the coconut or nuts and freeze again until firm. Keep frozen. When you’re ready to eat, let cool for a few minutes and then enjoy.

It’s Thanksgiving week- I couldn’t leave you hanging without something yummy to look at! Forget pies and turkeys and sides and all of that nonsense- you probably already have your big day game plan in place. I wanted to give you something to eat in the days before (or after) Turkey Day.
Chances are, you will need a snack to get you through the next few days. And hey- you might even have a half-open can of pumpkin puree that you need to use up. You can certainly eat this as a dessert, but it’s got no added sugar in it (unless you add some, that’s on you!). The sweetness comes from the cookies and you can add a little Stevia or honey if you like. It’s quick to whip up and even if you don’t have the gingersnaps, you could use just nuts, which would make it even better for you! You’re welcome.

Pumpkin and Gingersnap Yogurt Parfait (gluten-free)

Ingredients
  • 10 gluten-free gingersnap cookies (I used Mi-Del, feel free to use whatever brand you like)
  • 1-2 tablespoons coconut oil, melted
  • 1 cup pumpkin puree (fresh if you’ve got it)
  • 1 teaspoon pumpkin pie spice or ½ teaspoon cinnamon, ⅛ teaspoon cloves, ⅛ teaspoon ginger, ⅛ teaspoon nutmeg and ⅛ teaspoon allspice
  • 1 cup plain or vanilla greek yogurt (I used plain and added a few drops of vanilla Stevia liquid)
  • ¼ cup pecans or walnuts, chopped, plus more for topping

Instructions
  1. In a food processor or plastic baggie, crush the gingersnap cookies into crumbs. Put them into a small bowl and combine with the coconut oil. Put in the refrigerator or freezer while you assemble the parfaits.
  2. In a small bowl, combine the pumpkin and spices. If you want to sweeten your yogurt with Stevia or another sweetener, do so in another small bowl.
  3. To assemble: in each glass, put a layer of cookies, a layer of the pumpkin mixture, a layer of cookies and chopped nuts, and a layer of yogurt. Top with the last bits of the cookie mixture and more nuts if you’d like. Keep cool in the fridge until serving.

I don’t eat much store-bought candy these days, but when Halloween rolls around, I find myself eyeballing those Reese’s peanut butter pumpkins. I know it’s basically the same as a peanut butter cup, but for some reason, the pumpkin always tasted better to me. Maybe a better peanut butter to chocolate ratio? Maybe the eye-catching Halloween packaging? Let’s be real, though- that peanut butter filling is so good.
But that filling is also full of not-so-healthy ingredients (sorry, Mr. Hershey! xoxo). All it took was a few pantry ingredients to create a satisfying version of my own with no refined sugars. Hooray! The pumpkin cutter I used is from Pampered Chef, but I’m sure you could find one this time of year at your local baking/craft store. You could also roll them into balls, or cut them into another shape, or save this recipe for a few months so you can knock of the Reese’s peanut butter eggs come Easter time.
If I had the time and/or patience, I would make these to hand out to trick-or-treaters. Though I’m not sure parents let their kids accept homemade treats anymore. Sad times. Must go cheer myself with a pumpkin.

 

Homemade Reese’s Peanut Butter Pumpkins [with no refined sugar]

makes 1-2 dozen pumpkins, depending on how thick you make them.

Ingredients
  • ½ cup peanut butter
  • 2 tablespoons honey
  • ½ teaspoon vanilla
  • pinch salt
  • 2-4 tablespoons coconut flour (this is just to give the filling more body. you can also use almond flour, but i wouldn’t recommend a wheat or grain flour as a substitute since the filling is not baked.)
  • 4 oz unsweetened, dark or semi-sweet chocolate
  • 1 teaspoon coconut oil
  • chopped peanuts or sprinkles for topping (optional)

Instructions
  1. In a small bowl, whisk peanut butter, honey, vanilla and salt until combined. Using a spoon or spatula, mix in 2 tablespoons of the coconut flour. Continue adding coconut flour by the tablespoon until the mixture forms a dough. Refrigerate the dough until cool, at least 30 minutes.
  2. When your dough is ready to work with, roll it out with a rolling pin and use a small pumpkin cookie cutter to make the pumpkin shapes. Re-roll the dough if necessary to make more pumpkins. Place the pumpkins on a parchment paper-lined cookie sheet and freeze until firm, at least 1-2 hours.
  3. When you’re ready to dip them, melt the chocolate and coconut oil in the microwave (30 seconds and then check every 10 seconds until melted). Using a fork to pick up each pumpkin, dip the pumpkin into the melted chocolate until covered, tap off the excess chocolate and place back on the parchment paper. Repeat until all pumpkins are covered.
  4. Sprinkle each pumpkin with chopped peanuts or sprinkles if desired. Freeze or refrigerate until the chocolate is set. Trim off any excess chocolate and serve cool (not frozen) or at room temperature. Store in the fridge.

That old Quaker and his granola bars got nothin’ on these.

Sunflower and sesame might sound like a crazy combination of flavors, but I swear.. these bars are addicting! I came across a very forgiving formula for chewy granola bars and proceeded to raid my fridge and cabinets for ingredients straight away. (I had no plan, as usual.)
I’m glad to say these are a huge improvement on my last granola bar effort. They only have natural sweeteners (honey and barley malt syrup) and they actually stay together, instead of crumbling the minute you remove them from the fridge.
I wasn’t sure the miniature food critic in the house would like the flavor combo, but he gobbled them up every day of the week. I cut them up into tiny squares for him so he could grab and go and he was all over that- kid doesn’t slow down for anything (but the iPad.. umm, quit it with all the new kid-luring technology, Apple!).
These would be a solid post-workout snack, too- when cut up, they actually remind me of those little marathon squares they sell in the bulk food section at Whole Foods.
These bars have a kind of roasty/toasty taste to them and aren’t sickly sweet. If you’re into that, just use chocolate instead of dried fruit- that’ll give you a proper sugar rush. I prefer the little pops of sweetness from the dates and figs. (Who knew about dried figs and didn’t tell me?? They are so good! My childhood self would be stunned at the thought- remind me to tell you my Fig Newton story another time.)

Sunflower Sesame Granola Bars

based on a basic granola bar formula from Good Life Eats (by way of Brown Eyed Baker)

Ingredients
  • ⅓ cup honey
  • ¼ cup barley malt syrup (gives it a ‘toastier’ flavor, but more honey is a fine substitute)
  • ¾ cup sunflower seed butter
  • ¼ cup tahini (sesame seed paste)
  • 1 teaspoon cinnamon
  • 1 teaspoon sea salt
  • ⅔ cup almonds, chopped
  • 3 tablespoons sunflower seeds
  • 2 tablespoons sesame seeds
  • 2½ cups old-fashioned or thick-cut rolled oats
  • ⅓ cup dried pitted dates, diced
  • ⅓ cup dried figs, diced with stems removed
  • ⅓ cup raisins

Instructions
  1. Preheat the oven to 325 degrees. Prepare an 8×8 pan with parchment paper.
  2. In a large bowl, whisk together honey, barley malt syrup, sunflower seed butter, tahini paste, cinnamon and sea salt until combined. Fold in chopped nuts and oats, followed by the dried fruit until all is well combined.
  3. Spread the mixture into the pan with a spatula or your fingers. Make sure it press it firmly into the pan so the bars don’t crumble after they are baked.
  4. Bake at 325 for 25 minutes or until the edges begin to brown. Remove from the oven and let cool at room temperature for about 30 minutes. When the pan is cool to the touch, move to the freezer or refrigerator for 1 hour, or until firm. Cut into bars with a very sharp knife (I cut 16 bars). Store in an airtight container in the refrigerator.

Something strange happened last week.
I had leftover AVOCADOS. That never happens, like, ever.
We were heading out of town for a few days and I needed to use them up quickly. While I have used frozen avocado before with success (just mash and freeze flat in a freezer bag), I wanted to make something we could snack on in the car and for breakfast during our trip (breakfast guac?). I also had a borderline-gross banana looking to be used, and I thought.. avocado banana bread? Why not?
Why not, indeed!
It may seem like there are a lot of ingredients, but it’s worth rummaging around your cupboards to find everything. The avocado gives the bread richness and color- I love the bright specks of avocado peeking out in each slice. They almost remind me of pistachios- next time I’ll throw some of those in, too.
The ingredients come together quickly, but of course, it takes an hour to bake, plus cooling time.. so you’ll have to wait a bit before you dig in. I know they call them quick breads because they mix up quickly, but they should really be called it’s-going-to-be-really-hard-to-wait-for-this-to-cool-before-you-stuff-your-face breads. Just my opinion.
Hopefully you have an extra avocado around waiting to be baked up into this bread.
I would also recommend just smashing it up on some toast with sea salt.
And I’ll bring the breakfast guac back on the table- that’s a solid option, too.

  • 2 cups whole wheat flour (freshly ground, if possible)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 2 eggs at room temperature
  • ½ cup roughly mashed avocado
  • ½ cup mashed banana
  • ½ cup Greek yogurt at room temperature
  • ¼ cup coconut oil (in liquid state)
  • ½ cup honey
  • 1 teaspoon vanilla
  • 1 Tablespoon lemon juice
  • ½ cup chopped nuts (I used walnuts)
  • ¼-1/2 cup chocolate chips (I used minis)

Instructions
  1. Preheat the oven to 350. Line a 9×5 loaf pan with parchment paper rubbed lightly with oil.
  2. Whisk together flour baking soda, cinnamon and salt in a bowl. In another bowl, whisk eggs, avocado, banana, yogurt, oil, honey, vanilla and lemon juice until combined, making sure all ingredients are at room temperature so the coconut oil doesn’t harden.
  3. Add the wet ingredients to the dry, being careful not to overmix. Stir in the nuts and chocolate chips.
  4. Pour the batter into the prepared pan. Bake for about an hour or until a toothpick comes out clean. Cool completely before slicing.

I’ve been a little scared to get back to baking. My brain is trained to grab the sugar immediately!
But I am retraining.. and grabbing the honey instead.
These brownies came about after a long internet search for a brownie recipe without refined sugar. I found black bean brownies, gluten-free brownies, vegan brownies.. but nothing seemed to be appropriate for me. So I started my own little brownie experiment.
These brownies are made with whole wheat flour, carob powder, mashed banana, honey and olive oil- a little different than your typical ingredients. The texture is not like your traditional brownie (I don’t know if you can ever really get that signature brownie bite without refined sugar), but it is pleasing, and doesn’t leave that sugary coating on your mouth.
I hesitate in calling these “healthy” – I am finding that word means many different things to different people and doesn’t really define food anymore. I do believe they are nourishing, won’t give you a crazy sugar rush and are appropriate as a daily treat or snack. If you want to cut back on the sugar a bit, these are a good way to ease into it.
I’m getting back in my baking groove..
surely some sweet, strange concoctions are on the way.

  • 1 cup whole wheat flour
  • 1 cup carob powder (cocoa powder can be substituted, carob is what I had on hand)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt
  • 1 cup mashed banana (about 3 small bananas)
  • ½ cup honey
  • ¼ cup olive oil
  • 2 teaspoons vanilla extract
  • 2 eggs
  • ¼ cup mini carob or chocolate chips, or chopped chocolate
  • ½ cup chopped nuts (optional)

Instructions
  1. Preheat oven to 350 degrees. Line a 8×8 pan with parchment paper.
  2. In a large bowl, combine whole wheat flour, carob powder, cinnamon, baking powder and salt. In another medium bowl, whisk mashed banana, honey, olive oil, vanilla and eggs. Pour wet ingredients into dry ingredients and mix until just combined. Add the carob/chocolate chips and/or nuts. Spread into the prepared pan
  3. Bake brownies for 20-30 minutes or until a toothpick inserted in the center comes out clean. Pull the full pan of brownies out to cool completely on a rack. Cut brownies when cool and serve. Keep in an airtight container.
