I love posts that have the labels “chocolate” and “vegetables” together. Sometimes it seems my main goal in life is figuring out how to fit chocolate into every meal.
Still working on it.
Chocolate-covered broccoli probably wouldn’t go over well with my crew. Or would it..
Back to reality!
I made this cake last night because
a) we had nothing sweet in the house to consume (????)
b) we have a fridge bursting with garden produce
c) I need chocolate to survive.
I really want to say this cake is healthy, but it would be more accurate to say it is healthier than most cakes. It has lots of ingredients I deem healthy (zucchini, olive oil, greek yogurt, whole wheat flour), but also a few of the usual suspects like sugar and chocolate chips and butter (which I actually think is not so bad if you get it from a good source- we need good fats, people!). If you are feeling like a super-healthy person, I’m sure you could sub out the sugar for another sweetener and switch out anything else you don’t like, but it will probably taste less like cake and more like a chocolate-flavored brick. But, by all means- eat, drink and make chocolate bricks if that’s your thing.
I’m going to be real and tell you the reason I didn’t photograph the full cake is because I cut two giant slices for the hubs and I to eat not more than 10 minutes after it was out of the oven. Hot chocolate cake with smooth chocolate ganache running down the sides is like a big chocolate party in your mouth. For research purposes only (ahem), I tried it at room temperature today- it was still tasty, but I could tell it was losing a little moisture (due to all that healthiness inside). This can surely be remedied with another batch of ganache. Or some ice cream. Or a giant glass of cold, cold milk.
Raise a glass of raw milk and get your forks. Here’s to your health!

Ingredients
  • ½ cup unsalted butter, softened
  • ½ cup olive oil
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup yogurt (I use greek)
  • 1 cup all-purpose flour
  • 1¼ cup whole wheat flour
  • ¾ cup cocoa powder
  • 2 teaspoons espresso powder (optional)
  • 2 cups shredded zucchini
  • ½ cup chocolate chips or chopped chocolate
  • 4 ounces bittersweet chocolate, chopped
  • ½ cup heavy cream
  • 2 tablespoons sugar
  • 2 tablespoons water

Instructions
  1. Preheat the oven to 350 degrees. Prepare a cake pan (I used a 10-inch round springform pan because there’s a lot of batter) with butter and flour or baking spray.
  2. Cream the butter, oil, sugars, vanilla, baking soda, baking powder and salt together until well-combined. Beat the eggs in one at a time. Add half of the flour, stir; add the yogurt, stir; and add the rest of the flour, cocoa powder and espresso powder (if using) and stir again. Add the zucchini and chocolate chips and stir to combine. Pour the batter into the pan and bake for 35-50 minutes or until a toothpick comes out clean.
  3. Meanwhile, place the chocolate into a small bowl. Heat the heavy cream, sugar and water until warm (not boiling) and pour it over the chocolate. Stir to combine. Let sit until thickened.
  4. When you’re ready to serve, you can pour the chocolate sauce over the whole cake or on individual sliced. You can serve hot or at room temperature, but it is best enjoyed in the first day or two of baking.

Recently, I’ve been getting into baking full-size cakes. It seems like there are never enough occasions that call for a big, beautiful cake. After having my cupcake business in Ohio, I am much more inclined to bake cakes than cupcakes now (like the rainbow cake and the strawberry cake).
Since I was experimenting with beets last week (see my sweet beet pancakes), I wanted to try out Joy the Baker‘s beet cake recipe that I’d been eyeing for a while. The recipe is similar to a basic chocolate cake with the addition of grated beets into the batter and the frosting- not too much extra effort to try something new and different.
As the beets were in the oven, I was getting a little nervous- my house was smelling like roasted dirt. But apparently, that’s normal when you’re dealing with beets. Smells were deceiving in this case- the cake certainly does not taste like dirt. Each chocolate-filled bite is strangely light and dense at the same time. You’ll have to bake it to see what I mean.
I served this cake to guests and didn’t reveal the secret ingredient until after. Everyone seemed pleasantly surprised.. or maybe just relieved that it wasn’t something worse than beets.

 

Chocolate Beet Cake

Ingredients
  • For the Cake: 2 medium beets, unpeeled but trimmed of their greens
  • 1 teaspoon vegetable oil
  • 6 ounces (3/4 cup) unsalted butter, softened, plus more for greasing the pans
  • 1 cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour, plus more for dusting the pans
  • ⅔ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 1¼ cups buttermilk
  • For the Frosting: 1 cup (2 sticks) unsalted butter, softened
  • 8 ounces (1 brick) cream cheese, softened
  • 4 to 5 cups powdered sugar, sifted
  • 2 tablespoons finely grated beets, mashed with a fork
  • 1 teaspoon pure vanilla extract or scrapings of one vanilla bean pod
  • 1-2 teaspoons milk, depending on desired consistency
  • ½ teaspoon fresh lemon juice
  • pinch of salt

Instructions
  1. Place a rack in the center and upper third of the oven. Preheat oven to 375 degrees F.
  2. Thoroughly wash beets under running water, and trim their leaves, leaving about ½ inch of stem. Place clean beets in a piece of foil. Drizzle with just a bit of vegetable oil. Seal up foil. Place on a baking sheet in the oven. Roast until beets are tender when pierced with a knife, about 1 hour.
  3. Remove the beets from the oven. Open the foil and allow beets to cool completely. Beets will be easy to peel (just using a paring knife) once completely cooled.
  4. Using a box grater, grate the peeled beets on the finest grating plane. Measure ¾ cup of grated beets for the cake and 2 tablespoons for the frosting. Set aside.
  5. Reduce the oven temperature to 350 degrees F. Use butter to grease two 8 or 9-inch round baking pans. Trace a piece of parchment paper so it is the same size as the bottom of the cake pan. Cut it out and place inside the cake pan. Butter the parchment paper. Add a dusting of flour to coat the pan. Set pans aside while you prepare the cake.
  6. In the bowl of an electric stand mixer, fitted with a paddle attachment, cream together butter and sugars. Beat on medium speed until pale and fluffy, about 3 to 5 minutes. Beat in eggs, one at a time, for one minute after each addition. Stop the mixer and scrape down the sides of the bowl as necessary. Once eggs are incorporated, beat in beets and vanilla extract until thoroughly combined.In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  7. Add half of the dry ingredients to the butter and egg mixture. Beating on low speed , slowly add the buttermilk. Once just incorporated, add the other half of the dry ingredients. Beat on medium speed until milk and dry ingredients are just incorporated. Try not to overmix the batter. Bowl can be removed from the mixer and mixture folded with a spatula to finish incorporating ingredients. Cake batter will be on the thick side… not pourable.
  8. Divide the batter between the two prepared cake pans. Bake for 23 to 25 minutes (for a 9-inch pan) or 30-32 minutes (for an 8-inch pan). Cake is done when a skewer inserted in the center comes out clean. Remove cakes from the oven and allow to rest for 10 minutes. Invert cakes onto a cooling rack to cool completely before frosting and assembling the cake.
  9. To make the Frosting: In the bowl of an electric stand mixer, fitted with a paddle attachment, beat cream cheese for 30 seconds, until pliable and smooth. Add the butter and beat for another 30 seconds, until well combined. Stop the mixer and scrape down the bowl as necessary. Beat in the beets. Add the powdered sugar, vanilla extract, milk, lemon juice, and salt. Beat on medium speed until smooth and silky. Refrigerate the frosting for 30 minutes before frosting the cooled cakes.
  10. To assemble the cake, place one layer of cake on a cake stand or cake plate. Top with a generous amount of pink frosting. Spread evenly. Place the other cake on top of the frosting. Top with frosting. Work frosting onto the sides of the cake. You will have extra frosting left over. Refrigerate for an hour before serving (it will make the cake easier to slice). Cake will last, well wrapped in the refrigerator, for up to 4 days.

Oh, how the times have changed.
If you told me five years ago that I’d be recommending that you eat beets in any form, I would have laughed in your face. But here I am, about to tell you why you need to make beet pancakes- and soon.
This weekend, I had my first experience cooking with beets. Hubs brought home four beets for me from our farmer (Hilton) and I knew it was time to experiment. Is it weird that I am not ready to eat a plain roasted beet, and that I’d rather put it in a pancake first? Weird or not, that’s what I did. I roasted those babies up, trimmed and pureed them (all with GLOVED hands, which I highly recommend unless you want stained beet fingers), and mixed them up into my batter.
The verdict? Sweet and delicious. Hubs thought they could use a little extra syrup, but I didn’t think the earthiness of the beets came on too strong. The little guy enjoyed them, too (that means he actually took a few bites and didn’t run the other way asking for M-I-L-K).
If you’re new to beets, too, I would encourage you to start with this recipe. It’s a fairly safe introduction into the world of beets. Some day soon, I hope to face my fears and actually eat a beet on its own.. but until then, I’ll be sitting down to a plate of these sweet, pink cakes.

Ingredients
  • 1 Cup All Purpose Flour
  • ¾ Cup Whole Wheat Flour
  • 3 Tbsp Light Brown Sugar
  • 1 Tbsp Baking Powder
  • ½ Tsp Kosher Salt
  • 2 Medium Beets, roasted & pureed (about ¾ Cups)
  • 1¼ Cup Milk
  • ⅓ Cup Plain Greek Yogurt
  • 1 Large Egg
  • 3 Tbsp Melted butter or coconut oil
  • 1 Tsp Vanilla extract

Instructions
  1. Sift the first 5 ingredients into a bowl.
  2. Place the rest of the wet ingredients in a separate bowl and whisk thoroughly to combine.
  3. Add the dry ingredients into the wet and stir until just combined (you don’t want to overstir the batter — some lumps are good).
  4. Drop about 2 tbsp of the pancake mixture onto a greased griddle or pan over medium heat and cook for 3 minutes on each side.
  5. Serve with desired accompaniments- butter, syrup, honey or jam.
  6. To freeze: Place the pancakes in labeled zipper bags and freeze for up to 3 months.

Lesson learned so far in life with two babies: sometimes you will just need to make cookies.
In some ways, parenting two has been easier than I thought. I bounced back from the birth easier, I am actually able to get us all out of the house in a decent amount of time, I can manage them both by myself. Some days I think I’m doing pretty great at this mom thing. Other days, when one is screaming, then the other is screaming, then they’re both screaming.. well, cookies happen.
These cookies have been on my list to try for a long time. They didn’t turn out quite like Joy’s, but I like the changes I made and they sure are addicting. I love the addition of coconut to a basic chocolate chip cookie, but the browned butter and coconut oil mixture takes this one over the top. My cookies didn’t spread much, so I like to think of them as little nuggets of deliciousness (see recipe below for my thoughts on that).
So the next time you’re having one of those days with all the screaming, make these cookies after things quiet down. They’ll help you forget all about it.
Coconut Brown Butter Chocolate Chip Cookies

Ingredients
  • ¼ cup shredded coconut (sweetened or unsweetened)
  • 1 stick unsalted butter
  • 4 oz coconut oil
  • 1 cup granulated sugar
  • ¾ cup brown sugar
  • 1 tablespoon pure vanilla extract
  • 1 cup whole wheat or white whole wheat flour
  • 1½ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon fine grain salt
  • 1 large egg
  • 1 large egg yolk
  • 1 cup chocolate chips

Instructions
  1. Place a rack in the center and upper third of the oven and preheat to 350 degrees F. Line two baking sheets with parchment paper. On one baking sheet, spread out shredded coconut. Toast coconut for 4-6 minutes, until browned and fragrant. Sweetened coconut will brown faster, so watch it carefully. Remove from the oven, place in a small bowl and let cool.
  2. Melt butter and coconut oil in a medium saucepan over medium heat. The butter will begin to foam and crackle. That’s a great sign. That means that the water is evaporating from the butter. Once the crackling subsides, keep an eye on the butter. The butter solids will begin to brown. You’ll smell the butter as it browns. Once well browned, immediately remove the butter from the flame and place in a small bowl. Removing the butter from the pan will ensure that it doesn’t continue to cook and burn in the hot pan. Allow the butter to cool for a few moments.
  3. **Joy suggests using ¾ cup of the melted butter mixture- I got closer to 1 cup but used the ¾ cup and my dough was a little drier than I’d like, so I would suggest trying the full amount. I think this is why the cookies didn’t spread much.**
  4. In a medium bowl, whisk together flours, baking soda and salt. Set aside.
  5. In the bowl of an electric stand mixer, fitted with a paddle attachment, measure granulated and brown sugar. Add the brown butter mixture and beat together, on medium speed, for about 2 minutes. The sugar may still look grainy. That’s ok.
  6. Add the egg and egg yolk and beat on medium speed for 2 minutes. The mixture should become silky smooth. Add vanilla extract and beat.
  7. With mixer on low speed, add the dry ingredients. Beat until just incorporated. Remove the bowl from the mixer and use a spatula to fold in the toasted coconut and chocolate chips. Dough will be thick.
  8. Cookies can be baked immediately, or the dough can be left in the refrigerator to chill for 30 minutes.
  9. Spoon balls by the tablespoonful onto the prepared baking sheets. Bake for 10 to 12 minutes, until golden brown but still slightly soft in the center. Remove from the oven. Allow the cookies to cool on the pan for 5 minutes, before removing to a wire rack to cool completely.

If you’re craving something sweet, rustic and easy to put together, than this cookie will be calling your name.
Just looking at this iron skillet reminds me of summers spent at my family’s cabin- but that’s just nostalgia talking, since our typical treats up there were things like oatmeal pies and roasted marshmallows. But I think this cookie would be perfect on a cool night, curled up under the blankets.. maybe with a little ice cream on top for good measure.
I promise you won’t miss the white flour in this cookie recipe. I actually prefer the nuttiness of the whole wheat flour, not to mention the health benefits. This doesn’t exactly qualify as health food, though, don’t worry- there’s still plenty of butter and sugar involved to classify it as dessert.
You probably have most of the ingredients on hand in your pantry to make this. If you don’t keep whole wheat flour on hand, you should take the plunge! I can’t think of a better way to introduce yourself to whole wheat baking than with a giant chocolate chip cookie. Yum!

 

Whole Wheat Chocolate Chip Skillet Cookie

Ingredients
  • 3 cups whole wheat flour
  • 1½ tsp. baking powder
  • 1 tsp. baking soda
  • 1¼ tsp fine sea salt
  • 8 oz. cold unsalted butter, cut into ½ inch pieces, plus more for buttering the pan
  • 1 cup dark brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 2 tsp. pure vanilla extract
  • 8 oz. chopped semi-sweet or bittersweet chocolate or chocolate chips/chunks

Instructions
  1. Preheat the oven to 350°F, with a rack in the middle. Butter a 10 or 11-inch ovenproof skillet, one that is at least 2-inches deep. If you’re unsure, measure, because if you use a too small skillet, you’ll have a messy overflow.
  2. Sift the dry ingredients into a large bowl.
  3. In another large bowl, or in the bowl of a stand mixer fitted with the paddle attachment, add the butter and the sugars. Mix just until the butter and sugars are blended, about 2 minutes using the mixer on low speed. Use a spatula to scrape down the sides of the bowl along the way. Add the eggs one at a time, mixing until each is combined. Mix in the vanilla. Add the flour mixture to the bowl and blend on low speed until the flour is barely combined, about 30 seconds. Scrape down the sides and bottom of the bowl.
  4. Add most of the chocolate to the batter. Mix just until the chocolate is evenly incorporated. Use a spatula to scrape down the sides and bottom of the bowl, then scrape the batter out into the skillet, pressing it out into an even layer. Sprinkle any remaining chocolate across the top, and casually press it into the dough a bit, just enough that it isn’t riding directly on top of the dough.
  5. Bake the cookies for 35-45 minutes, or until until the dough is a deep golden brown along the edge, and the center has set. Remove from oven and let cool a bit before slicing into. Cute into wedges or small squares.
  6. Makes one large skillet cookie, which you can cut into as many cookies as you like.

Good afternoon, earthquake survivors!  Seems like everyone is a little shook up today.  We didn’t feel it down here in GA, but if we had, I would certainly be celebrating survival with this crumb cake.
Truthfully, I made this crumb cake about 100 million years ago and forgot to post it.  I found the photos in my archive today and had to share with you.  This thing was really good.  I don’t remember where we ate it, or with who, but I remember it tasting just like the Starbucks coffee cake (which I love!).
It would be the perfect addition to a breakfast spread, great for an afternoon coffee break or as a sweet gift for a friend or neighbor.  Who wouldn’t be excited if you arrived at their door with this?
Ahhh.. so good.
I think it’s safe to say I’ll be making another one.
New York-Style Crumb Cake

Ingredients
  • Crumb Topping: 1 cup packed dark brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 1½ tablespoons cinnamon
  • 1 cup (2 sticks) unsalted butter, melted (and still warm)
  • 2½ cups all-purpose flour
  • Cake: 2½ cups all-purpose flour
  • ¾ teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 12 tablespoons (1½ sticks) unsalted butter, at room temperature
  • 1½ cups sugar
  • 2 large eggs, at room temperature
  • 1¼ cups sour cream, at room temperature
  • 1 teaspoon vanilla extract

Instructions
  1. Preheat oven to 350 F. Spray a 9×13 baking pan with cooking spray. A glass pan is recommended, but metal works too – your edges may be a little more crispy if you bake in metal.
  2. To make the crumb topping: Whisk the flour, brown sugar, granulated sugar, salt and cinnamon together in a large bowl. Add the melted butter and whisk to combine. Use a rubber spatula to fold in the flour – you’ll have to use a little elbow grease to work in the final bits.
  3. To make the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium speed until light and fluffy, about 2-3 minutes. Beat in the eggs, one at a time, letting the first incorporate fully before adding the second. Scrape down the sides of the bowl and beat for an additional 30 seconds. Add the sour cream and vanilla to the mixer and beat until just incorporated. Finally, add the flour mixture in thirds, beating just until combined.
  4. Transfer the batter to the prepared baking pan. The batter will be thick – just use a spatula to spread it evenly. Pick up the crumb topping by handfuls, and break off chunks, scattering them over the top of the batter. Use all of the topping – it will be a very thick layer!
  5. Bake for 45-55 minutes (rotating the pan at 15 minute intervals), or until a toothpick inserted in the center of the cake comes out clean. Let the cake cool in the pan for at least 30 minutes before serving.

May is all supposed to be all about pies around here, my darlings.  I’m starting out with a bit of an unconventional pie post, though, just to keep things exciting for you.. with whoopie pies!
Have you heard about whoopie pies?  They kind of had a moment in the foodie world recently, and it seemed like everyone was making them.  This was crazy to me!  I grew up in Lancaster County, PA, the Amish capital and home of the best whoopie pies around.  As a kid, no one I met outside of CenPenn knew what they were.  Now they are super popular, and rightly so.  They are so good!
The typical flavors for whoopie pies that I remember from home are chocolate and cream, pumpkin with cream cheese, red velvet, and chocolate peanut butter.  We’d get them at bake sales or any of the good markets- Central Market in Lancaster City, Saturday’s Market or Root’s.  Man.. I’m getting nostalgic/hungry.
The cookies are the cakey type, so if you love cookies or cake or frosting, these are for you.  You really can’t go wrong with the red velvet and cream cheese combo, either.  There is a little effort involved if you want them to look good visually, but if you don’t care what they look like, the recipe is fairly straight-forward.
I must admit to you that I have some real Amish whoopie pie recipes, but I’m saving them up for later.  I liked what I saw on Annie’s Eats, and I think they turned out similar to my hometown type, but they aren’t quite perfect.  Guess I’ll just have to do some more experimentation/taste-testing..

Ingredients
  • 2 cups all-purpose flour
  • 2 tbsp. cocoa powder
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 8 tbsp. unsalted butter, at room temperature
  • 1 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp. vanilla extract
  • ½ cup buttermilk, at room temperature
  • 1 oz. red food coloring
  • 1 batch cream cheese frosting, recipe follows

Instructions
  1. Preheat the oven to 375˚ F.
  2. Using something round, trace evenly spaced circles onto pieces of parchment paper sized to fit two cookie sheets. Place the parchment on the cookie sheets so that the side you have drawn on is facing down; set aside.
  3. In a medium bowl, whisk together the flour, cocoa powder, baking powder and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and brown sugar on medium-high speed until light and fluffy, about 2 minutes. Beat in the egg until incorporated, scraping down the sides of the bowl as necessary. Blend in the vanilla. With the mixer on low speed, beat in about a third of the dry ingredients, followed by half of the buttermilk, beating each addition just until incorporated. Repeat so that all the buttermilk has been added and then mix in the final third of dry ingredients. Do not overbeat. Blend in the food coloring.
  4. Transfer the batter to a pastry bag fitted with a large plain round tip. Pipe the batter onto the parchment paper using the tracings as a guide. Bake 7-9 minutes or until the tops are set, rotating the baking sheets halfway through. Allow the cookies to cool on the baking sheets at least 10 minutes, until they can be easily transferred to a cooling rack. Repeat with any remaining batter. Allow cookies to cool completely before proceeding.
  5. Transfer the pre-made frosting (you can make while cookies are baking/cooling) to a clean pastry bag fitted with a plain, round tip. Pair the cookies up by shape and size. Flip one cookie of each pair over so that the flat side is facing up.
  6. Pipe frosting onto the flat-sided cookie of each pair, leaving the edges clear. Sandwich the cookies together so the flat sides are facing each other and press gently to help the filling reach the edges. To store, refrigerate in an airtight container.

  • 2 tsp vanilla
  • 2 cups powdered sugar (or more, if needed)

Instructions
  1. Beat cream cheese, butter and vanilla until smooth (no lumps!). Add sugar until you reach the desired consistency and sweetness.

I am a chewy chocolate chip cookie lover.  There is just something excellent about biting into a soft, gooey, melty cookie.  Sounds perfect already.. but add nutella, and I’ll eat the whole batch.
I’ve been a little light on the posting lately.  That’s mostly because I got burnt out on all the vegan business.  It took me a little time to get back into my normal routine.. I was not in the mood for any kitchen extravagance.  But these were too good not to share with you!
These little gems are easy to throw together and perfect with a glass of milk.  If you’re a nut person, you should try throwing in some chopped hazelnuts.  That might just take things over the top.  They’re great for crowds as well.
Ooh, and if you’re hoping these are vegan, they can easily be made so with Earth Balance margarine and vegan egg substitute.. wait, is Nutella vegan?  I have no idea. Forget all of that and revisit my vegan chocolate chip cookies.  (Just another reason I shouldn’t be a vegan.) Yikes.
Nutella Chocolate Chip Cookies

Ingredients
  • 2 cups flour

  • ⅛ tsp fine sea salt
  • ½ cup melted butter (or ghee or coconut oil)
  • ⅔ cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1½ tsp vanilla
  • ¼ cup Nutella
  • 1 cup chocolate chips

Instructions
  1. Preheat the oven to 375 degrees. Prepare two pans with parchment papers or silpats.
  2. In a small bowl, whisk flour, baking soda and salt. In a large bowl or your stand mixer, cream melted butter, sugar and brown sugar. Add eggs one at a time until combined. Next, add vanilla and Nutella. Stop the mixer and fold in chocolate chips.
  3. Use a small ice cream scoop or melon baller to scoop cookie dough on to the prepared sheets. Bake for 8-10 minutes or until browning around the edges. Let cool on wire racks and eat up!

‘Cause, you know.. sugar’s vegan. (Woo hoo!)
Breakfast was a peanut butter banana wrap with almond milk.
Lunch was the salad bar at Lane’s.
Snack was (too many!!) vegan chocolate chip cookies.
Dinner was leftover pasta.
Let me just tell you about this banana wrap.  I make this for breakfast ALL. THE. TIME.  It’s my go-to, seriously.  Thank goodness I can still eat it!  I usually use honey, but I can handle the small switch to agave nectar.  So, so easy and quick- a great snack, and a hit with the little ones.
And these chocolate chip cookies?  Hold the phone.  I didn’t know butter-less, egg-less cookies could be so yummy!  They remind me of my pumpkin chocolate chip giants without the pumpkin.  Where have these been all my life?  Someone restrain me.
Things I learned today:
Vegan baking can be pretty awesome.
I need more nutrients (even with all my vitamins above, haha).. I’m tired!  But that could also be all the running around after my baby, who knows.
The vegan trial is really making me think about what I’m putting in my mouth.  If I’m not sure, I won’t eat it, but if I’m sure, I might overdo it (seriously, someone hide the cookies).  I should really apply the discernment to my normal diet.

Vegan Chocolate Chip Cookies

Ingredients
  • ⅓ cup sugar (I used organic)
  • ⅓ cup brown sugar
  • ¼ cup canola oil, coconut oil, melted butter or ghee
  • ¼ cup apple butter (apple sauce would probably work, too)
  • ½ cup almond milk (or non dairy milk of your choice… or use milk, they just wont be vegan anymore)
  • 2 Tbs cornstarch
  • 2 tsp vanilla
  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour (or regular whole wheat flour)
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup semisweet chocolate chips

Instructions
  1. Mix sugars and oil for a minute, then add in milk and tapioca flour, beat until all incorporated. Add half the flour baking soda, salt and mix well. Add in remaining dry and then fold in chocolate chips.
  2. Drop rounded tablespoonfulls of dough onto parchment paper or a silicon baking mat, press down slightly with your fingers. Bake at 350 degrees for 10-12 minutes.

 

Peanut Butter Banana Wrap

Ingredients
  • 1 soft whole wheat tortilla
  • 1 banana, peeled
  • 1-2 tablespoons peanut butter
  • 1-2 teaspoons honey or agave nectar
  • 2-4 tablespoons granola or other crunchy cereal
  • also feel free to switch it up, adding dried fruit and nuts is a good option, too!

Instructions
  1. Spread your peanut butter on your wrap, sprinkle with honey or agave nectar, granola and any extras.  Wrap it up and enjoy!

This post is long overdue.
I am a granola person.  It’s just how I roll.  Not only that, but I’m a picky granola person.  I like my granola just so.  And maybe that’s why I’ve waited so long to make it for myself.  I wouldn’t want to force down a batch of bad granola.. yuck.
This granola is my jam!
 I’ll eat granola in just about any way- alone, with milk, with yogurt, in a banana wrap (we’ve discussed these, no?), in a cupcake (comment if you want me to post that recipe!), whatevs.  I love it.  My baby is super jealous of my granola-eating because it’s one of the things he just can’t have yet- it’s full of deliciously nutty nuts, chewy (chokeable) fruit and crunchy oats.  Certainly not baby-friendly, but definitely mommy-friendly.
I like this particular recipe for its heathfulness.  It uses applesauce and honey for sweetness and is just swimming with flax seeds, nuts and fruit.  I can’t wait to make another batch and try out other flavor combinations.  I’m thinking chocolate coconut.. or something with macadamia nut.. yum.
If you make your own granola, does that officially make you ‘Granola?’
I think it probably does.

Fruit and Nut Granola

Ingredients
  • 2½ cups old-fashioned oats
  • 2½ cups quick cooking oats
  • 1½ cups puffed rice cereal (wheat works, too)
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon salt
  • ¾ cup natural unsweetened apple sauce (I made my own here by simmering a peeled, chopped apple in an inch of water until soft, draining the apples and then pureeing until smooth)
  • ½ cup honey
  • ½ cup light brown sugar or maple syrup
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla extract
  • 2½ cups chopped raw mixed nuts (by “mixed,” I just mean a variety. I used a mix of cashews, almonds, pecans and walnuts)
  • ½ cup flaxseeds (this is a lot of flaxseeds! if you’re not used to them, reduce by half or more)
  • 2 cups dried fruit (I used a mix of black raisins, golden raisins and dried cranberries)

Instructions
  1. Place two oven racks on the top and bottom ⅓ of the oven.
  2. Preheat the oven to 300°.
  3. Set aside two baking sheets with sides lined with a silpat liner, parchment paper or aluminum foil.
  4. In a large bowl, combine both oats, puffed wheat, cinnamon and salt.
  5. In a separate bowl, combine the apple sauce, honey, brown sugar or maple syrup, coconut oil and vanilla extract.
  6. Stir the wet ingredients into the dry ingredients.
  7. Pour the granola on the baking sheets, splitting evenly between the two baking sheets.
  8. With your hand, squeeze or pinch the oats together into small/medium clumps leaving space on the baking sheet between the clumps.
  9. Place the baking sheets in the oven for 20 minutes (one on the top, one on the bottom).
  10. While that is in the oven, chop your nuts and combine them in a bowl and set aside.
  11. With a large spatula flip over the granola and add the nuts to the baking sheet.
  12. Bake for another 20-30 minutes, until completely dry and golden brown. (The dry part is important! You don’t want soggy granola- it won’t store well or last long.)
  13. Let the granola cool completely on the baking sheets.
  14. Once cool, add in the dried fruit.
  15. Store in airtight containers (I recommend glass, like large mason jars) and enjoy.
