Inside Out Pizza Roll

Pregnancy is kind of a roller coaster.  Have you heard?
Mostly, I say that because it’s my excuse for not posting so much.  Even though I love food blogging, and I still check out other food blogs all the time, I’ve just been bad at documenting what’s going on in the kitchen around here.  I’ve been really scatterbrained, too.. especially at the grocery store- not really buying things that go together, just whatever I feel hungry for at the time.  But I finally buckled down and made a huge pot of meat sauce that will work in a few other recipes, like this one!
This recipe is based on a recipe by Rachael Ray.  It’s very easy, especially if you use this tried and true, super quick pizza dough recipe as the base for your dough instead of her recipe, which takes a bunch of time to rise.  Basically, you spread cubed mozzarella and meat sauce over the dough and roll it up- how easy is that?  It’s a fun twist on normal pizza (not that I can ever say no to pizza of any kind).
Anyways, this was fun, quick and yummy.  I imagine kids would enjoy it and you could definitely switch out the ingredients and try different flavors.  Dare I say, “Yum-O”?

Inside Out Pizza Roll

(based on a recipe by Rachael Ray)
2 cups meat sauce, homemade or store bought
1 recipe pizza dough (love this one!)
8 oz fresh mozzarella, cut into 1/2 inch cubes
1 egg, lightly whisked
1. Preheat the oven to 375 degrees.  In a saucepan, heat meat sauce until the liquid reduces to about 1 1/2 cups.  Let meat sauce cool for about 10 minutes.  Meanwhile, roll out the pizza dough into a rectangle, about 12×16 inches.
2. When ready to assemble, scatter the cheese cubes over the top of the dough, leaving a 1 1/2 inch border.  Spoon the meat sauce over the cheese.  Brush the border with the egg and roll the dough up loosely, beginning at the short end.  Transfer to a greased or parchment paper-lined baking sheet, brush with more egg and cut 3 vents on top.  Bake until golden brown, about 40 minutes.

    Amen sister! Pregnant brain is an amazing thing! I didn’t realize we are due about the same time – YAY! How are you feeling? I feel like at this point, however close to due date we make it will be golden (if this were like my last pregnancy, I would’ve had the baby a week ago, so this feels much, much better 🙂

    This recipe looks really delicious! I’ll have to give that pizza dough a try for sure!
