This weekend, my little girl turned 2. I just love that little peanut and her growing personality. I would say I’m excited to be moving out of the baby stage.. but it’s only a few months before we move back into it. 😉

This was her birthday cake!

I know it’s not the typical two-year-old birthday cake (what, no Dora?!), but my girl loves berries. So berries we had.. and lots of them.

yellowlardcake1

But let’s back up a second.

This recipe is called Yellow LARD Cake. Say what!?!

A few years ago, I would not have been caught dead eating anything with lard in it, let alone a dessert. I grew up on the idea that lard and shortening (which are NOT the same, by the way) would make you super fat and you should avoid them at all costs. Pass the butter spray, please! (Can’t believe that’s still a thing.)

After lots of time spent learning about real food, my mind began to change. Maybe animal fats really were the way to go! I think the idea was really cemented in my brain when I took on the GAPS Diet, since the first stages of Intro included only tallow as the only fat (the beef or lamb equivalent for lard). For more reading about lard and it’s place in a nourishing diet, check out this post at Weed ‘Em and Reap.

The recipe for the cake comes from a book that everyone in the Paleo community has been talking about, Beyond Bacon. The cookbook is the brainchild of Matt and Stacy from Paleo Parents, one of the best Paleo resources out there. The book is all about how to take advantage the whole pig, scary bits and all. Matt and Stacy explain how to find quality pork and walk you through all of their preparations in a way that takes intimidating projects (like rendering your own lard) seem very doable.

The book is stuffed full of quality recipes. I’ve got my eye on the Smoked Pork Belly, Asian Short Ribs, Cucumber Dill Quiche, “Corn” Dogs, Fried Yuca, Savory Bacon Jam, Caramel Praline Lard Fudge, The Best Brownies.. so, like I said. A LOT of quality recipes in here.

yellowlardcake4

Matt and Stacy recommend their chocolate frosting to top the yellow cake, but I opted for whipped cream and fresh fruit in honor of my little berry lover. I used real cream, but you can use whipped coconut cream interchangeably. (You may also notice some powdered sugar on the cake. That is NOT paleo, I just think it looks so lovely for photographs!)

I followed the directions in the book for two layers of cake, but unfortunately, one of my layers broke as I was removing it from the pan. My advice would be to chill the layers in the fridge completely and then flip the pans and tap the cakes free only when you’re ready to assemble the cake. Be sure to line the pans with parchment paper, too- that makes a huge difference with these dense paleo cakes!

As for the taste, we can’t get enough! No complaints there. The cake was a great base for berries and cream, but I’d love to try the chocolate frosting on it, too. Can’t go wrong with any kind of cake, if you ask me.

So, in honor of my little girl and her 2nd birthday, I’m giving away a copy of Beyond Bacon to one of you! I have pretty much dropped the ball on giveaways around here, so I’m very happy to be bringing you one today. Makes the heart full to be able to give things away. Just follow the instructions in the Rafflecopter widget below, my darlings, and the winner will be announced at the end of the week!

Hazelnut Fig Bars https://www.ovenloveblog.com/hazelnut-fig-bars/ Mon, 10 Jun 2013 12:03:51 +0000 http://www.ovenloveblog.com/?p=2691

I’m in limbo.

We are moving soon (just two months away..). It’s soon enough that I’m starting to get sad/nostalgic/motivated to start fresh/etc; but not soon enough that I can actually do anything about it. It’s too soon to start packing, too soon for goodbyes. I want to soak up the last bit of time here, but I’m having trouble with that. Nick is gone at training and I feel like I’m just doing busy work- filling up the time, not really enjoying the time. I’ve made a summer bucket list, but getting through it seems like more work than fun (even though I know I’ll regret it if we don’t do those things before we go).

I think I might be in a cooking rut, too. I was immersed in the GAPS Intro diet for two months and now that I’m on the other side of it, I need to get inspired all over again. I’ve quit meal planning and I’m just cooking on the fly for me and the kids. I need to break out of this whole thing and start fresh!

hazelnutfigbars2

I did manage to mix up these faux Larabar-type bars a few days ago. It was hard not to eat them all in one sitting- snacks like this are tough for me to resist! It’s not good for me to be the only adult in the house with no accountability. One of these days you will find me laid out on the floor after a nut butter overdose, I’m telling you!

If you’re not into figs, you can substitute another dried fruit or more dates. But you should try them- they’re pretty good. And this is coming from a girl who was a fig hater for the first 20 years of life. Break free, people! Eat figs. Eat food you think you don’t like. It might surprise you. And you can always spit it out gracefully into your napkin, so there’s that.

Where is this post going? I need some direction. What’s going on with you guys? What inspires you? Share with me!

A Monday Morning Giveaway https://www.ovenloveblog.com/a-monday-morning-giveaway/ https://www.ovenloveblog.com/a-monday-morning-giveaway/#comments Mon, 06 Aug 2012 12:15:00 +0000 http://www.ovenloveblog.com/a-monday-morning-giveaway/ It’s Monday. AGAIN.
I think we need a giveaway!
Are you familiar with Rudi’s Organic Bakery? If you’re not, you should be! I am a big fan. In a perfect world, I’d all have my own fresh baked bread handy at all times. But, since most days I’m a hot-mess mommy just trying to keep it together, I need a good bread company like Rudi’s to rely on.
Rudi’s breads are free of chemicals, preservatives and pesticides. They offer gluten-free varieties, sprouted varieties (yay!) and you can find them in the commissary! Like I said- I’m a big fan.
Rudi’s just finished up a fun sandwich-box-designing contest on Facebook. Check out the winning sandwich box below- how cute! Looks like it would be perfect for those back-to-school lunches.
Lissy’s sandwich boxes are available via Rudi’s Facebook page with the purchase of three loaves of Rudi’s bread. With every sandwich box ordered, Rudi’s is donating $1 to the Lunch Box, a non-profit working toward healthier school lunches for kids. Love that!
In honor of all those artsy sandwich box entries, we are giving away a prize package for your little artist. The package includes an art kit, a sketch pad, two product coupons (just one more loaf and you can get your sandwich box!), a reusable bag to carry it all in and –wait for it– a beret! Adorable, right?
If you or your little ones love art and/or sandwiches, here’s how to enter:
Simply leave a comment with your name and email below. That’s it!
You’ve got until Wednesday at midnight EST to enter. Until then, go grab some Rudi’s and make yourself a sandwich! You’ll be glad you did.

Thoughts on BlogHer Food https://www.ovenloveblog.com/thoughts-on-blogher-food/ https://www.ovenloveblog.com/thoughts-on-blogher-food/#comments Mon, 23 May 2011 20:21:00 +0000 http://www.ovenloveblog.com/thoughts-on-blogher-food-and-a-swag-bag-giveaway-2/ I have so much to say about this weekend!
First of all, food bloggers are great people.  Every person I met was a g-e-m.  I loved meeting other people who care about things like photo garnishes, the chickens living in my garage (sorry I haven’t told you about that yet!) and how to take pictures in restaurants without annoying people.  Amazing, right?  I think we should all live together in a big blogging commune and eat tasty food all day.
Some of my lovely BlogHer pals (back row, L to R: Jaclyn of Food Plus Words, Jessica of The Novice Chef, Mandy of Home with Mandy, Jim of Comfort in Crumbs, Jess of Jessica Lynn Writes, half of my head and Erin of Erin’s Food Files. front row: Tina of My Life as a Mrs., Lindsay of Love and Olive Oil, Julie of The Little Kitchen) Go visit their blogs!!
I learned roughly a million things at this conference.  I have ideas out-the-waz and I can’t wait to roll out some new changes here at Oven Love.  I want to make it even better for you guys- easier to search, more fun to look at and even more inspiring.  I’m on the job.. so much to do!

Also- you should know that Atlanta is a delicious city.  My favorite eats from the weekend were Sublime Doughnuts and The Pop Shop.  Here’s Jess’s review of Sublime Doughnuts– Droolfest, USA.

And in case you were wondering, I was thinking about you the whole weekend.  I even brought you back some extra swag!  Here’s what’s in the bag:

-Reusable bag from Saveantibiotics.org
-Metromint water
-Butterball seasoning kit
-All new Lite Pom (this isn’t in stores yet, but it’s so good!)
-Quaker Oatmeal Squares
-Bob’s Red Mill Granola, Gluten-Free Hot Cereal and Pearl Whole Wheat Couscous
-Dole Peaches
-Assorted coupons (Stonyfield, Wasa, Barilla, etc)

To enter, all you have to do is comment below, and ask me a question!  You can ask me a question about anything: my recipes, someone else’s recipes, something that has nothing to do with food, the meaning of life, whatever you want.  Just ask me a question and you’ll be entered to win the swag bag.  Contest ends Wednesday night at midnight EST.

Winner will be announced on Thursday, and I’ll be answering all of your questions.  Look forward to some GFA pie posts later this week!

Corn, Crab and Tomato Salad https://www.ovenloveblog.com/corn-crab-and-tomato-salad-a-cookbook-giveaway-2/ https://www.ovenloveblog.com/corn-crab-and-tomato-salad-a-cookbook-giveaway-2/#comments Mon, 02 May 2011 20:25:00 +0000 http://www.ovenloveblog.com/corn-crab-and-tomato-salad-a-cookbook-giveaway-2/
Happy May, ladies and gents!
I want to start of the month with a little giveaway for you.. how does that sound?
The lovely folks at Cooking Light have come out with a new cookbook called Way To Cook.  This cookbook isn’t just your typical pretty food photography and written recipes.  The book takes you through various food categories and explains basic techniques through pictures.  And I have two to give away to you guys!
If you’re a fan of Cooking Light Magazine and their visual technique explanations, you will love this cookbook.  Each section explains a technique and then shows a few recipe examples.  It’s all about learning and growing as a cook.  How cool is that?  It’s so accessible.  It actually reminds me of food blogging in a way- it’s like a collection of great tutorials.
I wanted to make a recipe from the book and I picked this fresh crab salad from the “way to assemble” section. If you click the picture below, you can see all of the extra nuggets of information you get in addition to the written recipe.  I love that!  This recipe is perfect for summer lunches, get-togethers and picnics.  You can also use it for Cinco de Mayo this week, but I would change a few flavors- substitute cilantro for basil and lime juice for lemon juice- quick and easy.
The only thing I didn’t like about making this recipe was the price of crab!  I guess I don’t buy crab very often.. but it is expensive!  I cut down the amount of crab in the recipe by half and it still seemed like plenty to me.  I served it over greens, but you could serve alongside a grilled sandwich or with some cool summer soup.
Looks good, right?
Would you love to win the cookbook for your shelf? (Giveaway is closed.)

Win a Month of Three Sisters Cereal! https://www.ovenloveblog.com/win-a-month-of-three-sisters-cereal-2/ https://www.ovenloveblog.com/win-a-month-of-three-sisters-cereal-2/#comments Tue, 22 Feb 2011 10:30:00 +0000 http://www.ovenloveblog.com/win-a-month-of-three-sisters-cereal-2/
Are you a cereal person?  I love it.  Growing up, cereal and oatmeal were essentials at our house (“Breakfast is the most important meal of the day, Natalie.” Ahem.)  I never got the sugary good stuff, though.  Mom and Dad were not about to let that happen.  Sugar and I were (are) a crazy combo.  I had dreams about Lucky the Leprechaun and his marshmallow goodness.
Now that I’m grown, I recognize the logic and don’t buy anything “magically delicious.”  There are too many artificial ingredients and I just can’t justify them as foods worth having around.  Enter Three Sisters Cereal– sold exclusively at Whole Foods– a company providing sweet morning treats with a conscience.
Three Sisters has taken all of our favorite sweet cereals- like Lucky Things and Cinnamon Toast Stuff- and made whole grain, all-natural versions.  Is that not the coolest thing ever?  They also have a neat little line of oatmeal.  And they power their business with wind energy.  So stinkin’ cool.
Now, don’t get me wrong, these cereals are still sweet.  You can’t substitute these for bran flakes and expect weight-loss miracles.  But, if you’re looking for something sweet in your cereal bowl anyway, you should ditch the fake ingredients and HFCS and try Three Sisters.
I was going to try some fun recipes with the cereal, really- I had the best intentions.  Unfortunately, I ate it all and have no recipes to show for it.  But I can tell you it’s delicious.  And I can do you one better- free cereal for a month.
Giveaway is closed.
The cereals and oatmeal were so good.  I loved the Dark Chocolate Oatmeal- it’s great with a banana or as a little snack in the evening.  Loved it all.  Thanks, Three Sisters, for giving me a taste.  Here’s hoping you’ll get a taste, too!
